These Organic Spinach and Mushroom Stuffed Portobello Mushrooms are a savory delight! Packed with organic goodness, these mushrooms make a satisfying and nutritious meal. Perfect for a cozy night in!

  • Preheat oven to 375°F (190°C). Brush portobello mushroom caps with olive oil and place them on a baking sheet, gill-side up. Bake for 10 minutes.
  • In a skillet, heat olive oil over medium heat. Sauté diced onion and minced garlic until softened.
  • Add diced mushrooms and chopped spinach to the skillet. Cook until mushrooms are tender and spinach is wilted.
  • Stir in breadcrumbs, grated Parmesan cheese, salt, and pepper. Mix well until combined.
  • Spoon the spinach and mushroom mixture into the baked portobello mushroom caps.
  • Return stuffed mushrooms to the oven and bake for another 10-12 minutes, until filling is golden brown and mushrooms are cooked through.
  • Serve hot, garnished with additional Parmesan cheese if desired.
