Method:

  • Preheat oven to 400°F (200°C). Toss chopped vegetables with olive oil, salt, and pepper. Roast on a baking sheet for 30-35 minutes, until tender and caramelized.
  • In a large pot, sauté diced onion and minced garlic in olive oil until softened.
  • Add roasted vegetables to the pot. Pour in vegetable broth and bring to a simmer.
  • Stir in dried thyme, salt, and pepper. Simmer for 10-15 minutes.
  • Blend soup until smooth using an immersion blender or in batches in a regular blender.
  • Serve hot, garnished with a drizzle of olive oil and fresh herbs.
