Organic Roasted Vegetable Soup

Ingredients
- 3 cups mixed organic winter vegetables (such as carrots, parsnips, sweet potatoes, and cauliflower), chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups organic vegetable broth
- 1 tsp dried thyme
- Salt and pepper, to taste
- Olive oil
Method:
- Preheat oven to 400°F (200°C). Toss chopped vegetables with olive oil, salt, and pepper. Roast on a baking sheet for 30-35 minutes, until tender and caramelized.
- In a large pot, sauté diced onion and minced garlic in olive oil until softened.
- Add roasted vegetables to the pot. Pour in vegetable broth and bring to a simmer.
- Stir in dried thyme, salt, and pepper. Simmer for 10-15 minutes.
- Blend soup until smooth using an immersion blender or in batches in a regular blender.
- Serve hot, garnished with a drizzle of olive oil and fresh herbs.
