Organic Quinoa Stuffed Butternut Squash

Try this delicious Organic Quinoa Stuffed Butternut Squash for a hearty winter meal! Packed with organic quinoa, veggies, and a hint of sweetness from cranberries, it’s a nutritious choice that’s as beautiful as it is tasty.
Ingredients:
- 2 organic butternut squash, halved and seeds removed
- 1 cup organic quinoa
- 2 cups vegetable broth
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1/2 cup dried cranberries
- 1/2 cup chopped organic walnuts
- Salt and pepper, to taste
Instructions:
- Preheat oven to 400°F (200°C). Place butternut squash halves cut-side down on a baking sheet. Bake for 30-35 minutes, until tender.
- Rinse quinoa under cold water. In a saucepan, bring vegetable broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed and quinoa is cooked.
- In a skillet, heat olive oil over medium heat. Sauté diced onion and minced garlic until softened.
- Stir in dried thyme, cooked quinoa, dried cranberries, chopped walnuts, salt, and pepper. Cook for another 2-3 minutes, stirring well.
- Spoon quinoa mixture into the roasted butternut squash halves.
- Return stuffed squash to the oven and bake for another 10 minutes.
- Serve hot, garnished with fresh herbs if desired.
